Potato Salad
1 pound (3 medium) potatoes
6 slices bacon, diced
1 medium−size onion, diced
1/2 cup vinegar
1/2 cup stock or bouillon
1 tsp. salt
1/4 tsp. pepper
1 tsp. sugar
1 egg yolk, beaten
Scrub potatoes; rinse. Boil in jackets; let cool. Peel and cut in
1/4−inch slices. Cook bacon in hot pan until crisp. Add onion; stir
and cook until transparent. Add vinegar, stock or bouillon, and
seasonings. Stir; let come to a boil. Stir in egg; remove from heat
and pour over potatoes. Serves 2−4.

Macaroni Salad
Macaroni Salad
7 ounces Box elbow macaroni, cooked
2 Ribs celery minced fine
1 tablespoon Dry minced onion
1/3 cup Diced sweet pickles
1 1/2 cups Miracle whip
1/2 cup Kraft mayonaise
1/4 teaspoon Black pepper
1/4 teaspoon Dry mustard
1 teaspoon Sugar
Salt to taste
Combine everything just as listed. Refrigerate salad tightly
covered several hours before serving.

Oriental Chicken Salad
Oriental Chicken Salad
Salad:
1 egg
1/2 cup milk
1/2 cup flour
1/2 cup corn flake crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 boneless, skinless chicken breast half
oil for frying
3 cups chopped romaine lettuce
1 cup red cabbage
1 cup Napa cabbage
1/2 carrot, julienned or shredded
1 green onion, chopped
1 tablespoon sliced almonds
1/3 cup chow mein noodles
Dressing:
3 tablespoons honey
1 1/2 tablespoons rice wine vinegar
1/4 cup mayonnaise
1 teaspoon Grey Poupon Dijon mustard
1/8 teaspoon sesame oil
Prepare dressing ingredients by mixing in a small bowl. Refrigerate while
preparing salad.
Cut each chicken breast into 5 strips. In one bowl, beat egg with milk.
In another bowl, combine flour with corn flake crumbs, salt and pepper.
Preheat oil over medium heat.
Dip individual chicken pieces in egg mixture and then roll in the flour
mixture. Fry chicken until browned, drain and set aside.
Prepare salad by tossing the chopped romaine with the chopped red
cabbage, Napa cabbage, and carrots. Sprinkle sliced green onion on top of
the lettuce. Sprinkle almonds over the salad, then the chow mein noodles.
Cut the chicken into small chunks. Place the chicken onto the salad
forming a pile in the middle. Serve with salad dressing on the side.

2 small tomatoes cut into thin wedges
1 cup frozen peas
¼ cups chopped red onions
½ cups slicked celery (optional)
1 cup Ranch salad dressing (homemade using ranch mix is best)
1 (8oz.) sour cream
1 cup Cheddar cheese, shredded
In a large clear glass salad bowl layer the torn mixed greens, chicken, bacon, tomatoes, peas, red onions, and celery
For dressing: in a small bowl, combine Ranch dressing and sour cream. Stir until well blended. Spread dressing over top of salad. Cover and chill up to 24 hours. To serve, sprinkle with cheese. Makes 10-12 servings.
For a southwest salad: Substitute corn for peas, avocados, and black beans for celery. Serve with salsa on the side.

4 cups chopped iceberg lettuce
4 cups chopped green leaf lettuce
1 cup chopped red cabbage
5.5 oz. can pineapple chunks in juice, drained
tortilla chips
PICO DE GALLO:
2 med. tomatoes , diced
1/2 cup diced spanish onion
2 tsps. chopped fresh jalapeno pepper, seeded and de−ribbed
2 tsps. finely minced fresh cilantro
pinch of salt
Combine all ingredients in a small bowl. Cover and chill.

1/4 cup Grey Poupon dijon mustard
1/4 cup honey
1−1/2 Tbsps. sugar
1 Tbsp. sesame oil
1−1/2 Tbsp. apple cider vinegar
1−1/2 tsps. lime juice

chill.

plastic bag. Put in fridge. Preheat outdoor or indoor grill. Grill the
chicken for 4−5 mins. per side or until done. Toss the lettuces and cabbage
together and divide into 2 large serving size salad bowls. Divide the pico
de gallo and pour in equal portions over the two bowls of greens. Divide the
pineapple and sprinkle on salads. Break tortilla chips into large chunks and
sprinkle on salads. Slice the grilled chicken into thin strips and divide
among bowls. Pour the dressing into two small bowls and serve with the
salads.
